step 1: get a bunch of pumpkins after halloween for cheap. I got these for a dollar each :D
step2: cut ’em open like this:
step 3: remove the guts and seeds (keep the seeds for eating or planting!)
step 4: arrange face down on a pan in an inch of water and bake at 375 until the flesh is fork tender–about 45 min.
step 5: remove pumpkin flesh from skin
step 6: puree. (add some water to make it easier.)
